Tacos de pescado // Battered fried fish tacos

Me encanta como unos tacos o una quesadilla pueden solucionar una cena en un momento y sin demasiado esfuerzo y además son muy versátiles así que da igual lo que haya en la nevera, con algo se podrán rellenar unas tortillas.
Esta vez tocó un poco de pescado con un toque asiático
Ingredientes
  • Pescado blanco
  • Cerveza
  • Harina
  • Cilantro
  • Salsa Blairs de te verde y wasabi (aunque una salsa verde, por ejemplo, también le iría estupendamente) 
Ensalada
  • Lombarda
  • Col china
  • Crema ácida
  • Lima
En un cuenco mezclar la crema ácida con lima y añadir las dos coles picadas finamente y dejar reposar unos minutos.
Mientras, preparar el rebozado de pescado: simplemente mezclar cerveza y harina.
Freír y montar los tacos con una capa de ensalada, el pescado, cilantro y salsa.

Beer battered fried fish tacos
 I love how tacos or quesadilla can make up dinner just in a moment using whatever that is in the fridge to fill in some tortillas. This time it was fish with a little asian touch:
Ingredients
  • White fish 
  • Beer
  • Flour
  • Cilantro
  • Blair's green tea-wasabi sauce
Salad
  • Red cabagge
  • Napa cabagge
  • Sour cream
  • Lime juice 
Mix in a bowl sour cream and lime juice. Then add both cabagges choped and rest aside.  
Prepare fish batter: simply mix flour and beer.
Fried fish and put tacos together: some salad with fish on top of it and then some sauce and salsa.

Salsas picantes Blair's// Blair's Death hot sauces

Como os comentaba hace un tiempo, Yummyplanet es mi tienda de cabecera cuando se trata de productos americanos. La verdad es que empecé comprando llevada por la nostalgia de productos que comía estando en Nueva York pero he ido descubriendo cosas nuevas y unas de las más llamativas son las salsas Blair's, que están reconocidas como las más picantes del mundo.
En el pack de 4 viene una selección de miniaturas muy práctica ya que al ser tan picantes cunden mucho.

La más suave es Jalapeño Death con jalapeños, tequila y tomatillos. Me gusta añadírsela a burritos "de desayuno" rellenos de huevos revueltos con espinacas. 
La siguiente, Blair's Original es la típica salsa picante, con una mezcla de chiles, ajo... y va bien con prácticamente cualquier cosa.

Tengo que ser sincera. Antes de probar estas salsas por primera vez no me creía que fueran tan picantes, pero lo cierto es que sin disolver llegan a provocar dolor. Así que a partir de esta, siempre las utilizo como especia más que como salsa.

After Death pica. Pica mucho. Me gusta echarle una gotita (mi consejo es ir añadiendo muy poquito a poco) en una taza de chocolate caliente con una pizca de canela.

Sudden es la más fuerte. Lleva miel y lima y quizá por esa mezcla de sabores (picante, dulce, ácido) me encanta usarla en recetas del sudeste asiático, como el Pad Thai o la salsa que acompaña a los rollitos vietnamitas

As I said some months ago, I always go to Yummyplanet when I need american food. First, I started to buy there for the products I miss from New York but then I started to discover some new products. One of them are Blair's Death hot sauces, which are suppossed to be the hottest in the world.
With the 4 bottles pack you get a pretty well sorted selection of miniatures (and that small size is something quite usefull once you learn how spicy they are)

The softest one is Jalapeño Death, made with jalapeños, tequila and tomatillos. I like to add it to breakfast burritos, filled with scrambled eggs and spinach.
Next one is Blair's original, with chilis, garlic, onion...I find it good with almost everything.

I've got to be honest. Before tasting them, I didn't think they were so hot, but without diluting them they can almost hurt. From this point, I always use it more as spice than a sauce. 

After death is hot. It is REALLY hot. I like to add a little drop (my advise is to do it very slow, tasting after every drop) in a hot chocolate mug with some cinnamon. 

Sudden death is the hottest one. It has honey and lime and maybe because of this hot-sweet-tangy mix I like to use them in South East Asian food, like Pad Thai or vietnamese summer rolls dipping sauce

Puré-sopa de zanahoria // Creamy carrot soup

Me ha costado asomar la cabeza por aquí...llevo tiempo intentándolo pero mis últimos meses en la Universidad han sido de locura.
Pero he seguido comiendo, optimizando el tiempo lo máximo posible. Las recetas bases, especialmente si se pueden congelar, solucionan muchas comidas y cenas sin resultar repetitivas, ya que cada día se pueden personalizar dando un plato distinto y últimamente la sopa de zanahoria está siendo uno de esos básicos. 

Puré-sopa base de zanahoria
Tan fácil como rehogar zanahoria y cebolla y añadir el agua justa para que las cubra. También se pueden hornear (en ese caso, la cebolla habrá de asarse entera, con la piel, para que caramelice sin quemarse) Se tritura y obtendremos un puré espeso de un precioso color naranja que congela perfectamente.

Crema de zanahoria con naranja y jengibre
Solo es necesario mezclar una parte del puré base con media de caldo de verduras, media de zumo de naranja y jengibre (mejor fresco, si es en polvo dejarlo cocer un poco y después añadir el zumo de naranja, que es mejor que no hierva). 
Esta sopa está buena tanto caliente (resulta muy reconfortante gracias al jengibre) como fría, puede ser muy refrescante.

Puré de zanahoria con yogurt y tahine
Una parte de base+una parte de caldo de verduras+ comino. Al servir, adornar con yogurt y tahine.

I'm been trying to write here for a long time, but this past months finishing my degree have been totally hectic.
But I still had time for cooking, trying to optimize time as much as possible. And basics, specially those good after frozen them are the best solution for lots of meals, having a totally different dish just changing the seasoning.
One of this basics is creamy carrot soup.
Basic carrot soup
As simple as sauté carrot and  onion and then boiling them with enought water to cover them. They may be roast in the oven (but them, onion should be roasted with the skin on). When is cooked, grind it and you get a thick orangee puree that can be perfectly frozen.

Carrot soup with orange and ginger
 Add to one fraction of carrot puree, half a fraction of vegetable stock, half a fraction of orange juice and some ginger. This soup is great warm and also cold (very refreshing!)


Carrot puree with yogurt and tahine
One fraction of carrot puree+one fraction of vegetable stock+cumin. Garnish with yogurt and tahine.
